Bimbi Park's Pizza Dough Recipe

(makes 2 small pizzas)


½ cup of white flour
1 ½ cup of wholemeal flour (I use organic stone ground)
¾ cup of room temperature water
1 table spoon of olive oil
7 grams of yeast
1 tea spoon of sugar
1 tea spoon of salt

  1. Mix flour, yeast, sugar and salt in a large bowl. Add water and oil. Stir until dough becomes firm.
  2. Using your hands, put the dough onto a floured bench and knead it until smooth and elastic. (You can use an electric mixer with a dough hook on low for 3 minutes)
  3. Spray a large bowl with some oil and put the dough in it. Cover with a clean towel and let sit in a warm spot (not in the sun or on the heater).
  4. After about 2 hours squash it up and roll it into a ball again. Let it sit for another hour under the towel and then roll it out to fit on your pizza tray (I don't use pizza trays as I cook them the traditional way – in the wood fired oven on the stone).
  5. Oil the tray and let it sit for about ½ an hour. Put sauce cheese and anything else you want.

Remember less is more. Traditional Italian Pizzas don't have a lot of ingredients on them.

Cowboy chicken & bean stew

Ingredients

drizzle of oil

1 large onion, chopped

6 rashers smoked streaky bacon, chopped

8 chicken portions (we used thighs and drumsticks), skin removed

1 tbsp smoked paprika

2 x 400g cans chopped tomatoes with garlic

200g barbecue sauce (measure by filling half a 400g can if you don't have scales)

1 tbsp dried oregano or mixed dried herbs

2 x 400g cans pinto beansgrated cheddar and tortilla chips, to serve (optional)

Steps

  1. Heat the oil in a large casserole dish with a lid. Add the onion and bacon, and cook over a medium heat for 15 mins, until the onion is really soft and starting to brown, and the bacon is crisp. Push to the side of the pan, increase the heat and add the chicken pieces. Cook for a few mins until the meat is nicely browned, but don't worry if it's not evenly coloured. Add the paprika, tomatoes, along with half a can (200ml) water, the barbecue sauce, herbs, a pinch of salt and a generous amount of black pepper. Cover with a lid, lower the heat to a gentle simmer and cook for 45 mins, stirring occasionally.
  2. Check that the chicken is tender – if not, cover again and cook for 15 mins more. Add the beans and simmer, uncovered, for 20 mins until the sauce is thickened. Serve in bowls topped with grated cheddar and tortilla chips, if you like.

Hold apples on skewer over coals until the skin blisters. Remove skin and roll apple in sugar flavoured with cinnamon. Return over the coals until the sugar melts. Remind little ones to wait for it to cool before eating

Smores

*Please note: Smores can be made in many variations.  Here are just a couple of ideas:

Ingredients:

-  Chocolate Wheaten biscuits or Milk Arrowroot biscuits

-  Chocolate or nutella spread

-  Marshmellows

 

Method:

1.  Cook marshmellows to your liking over a campfire

2.  Sandwitch cooked marshmellows between two chocolate wheaton biscuits

*Please note: If using biscuits other than Chocolate Wheatons you will now need to add the chocolate peice or nutella to your sandwitch.

3. Enjoy
