Australian Damper
This bread made by bush settlers may be baked on the open fire or in a regular oven. As is typical of hand-me-down recipes, there are as many versions as there are bush babies. One recipe we read says to use beer instead of milk, then wrap the dough around a stick and cook over an open fire.
Ingredients
• 2 cups self-rising flour
• 1/2 teaspoon salt
• 2 teaspoons sugar
• 3 tablespoons butter
• 1 cup milk
Mix the flour, salt and sugar together in a bowl. Cut in the butter until fine crumbs form. Add milk to make a soft dough. Knead lightly on floured board until smooth. Shape into round loaf, brush with milk, and bake at 375 degrees F. for 30 to 40 minutes, or until the loaf makes a hollow sound when tapped.
Oat and Nut Pancakes
Ingredients
• 1 & 1/2 half cups of oats
• 1 cup of flour
• 2 tablespoons of brown sugar
• Pinch of salt, to taste
• 3 teaspoons of baking powder
• ½ a cup of mixed chopped nuts
• 1 & ½ cups of milk
• 2 eggs
• 2 tablespoons of butter
Mix together all the dry ingredients (oats, flour, sugar, salt, baking powder, nuts,) and put to one side, while you whisk together the milk, eggs, and butter. Pour this onto the dry ingredients and mix until combined. Lightly grease a griddle or frying pan and pre heat on the fire. Pour about half a cup of the pancake mix into the pan and cook until bubbly and edges look dry, turn pancake over and cook until golden brown. Serve with maple syrup or similar.
Simple Spam Snack
Ingredients
• 1 onion
• 3 or 4 potatoes, (depending on size)
• 1 tin of Spam
• 1 tablespoon of butter
• Salt & pepper to taste
Peel and chop the onion and potatoes into roughly ¾ inch pieces, and cook in skillet or frying pan until tender. Chop spam into similar size cubes as onion and potatoes and add to skillet or pan add salt and pepper and continue cooking until all ingredients are, crispy and spam is well heated through. Allow to cool slightly and serve with some crusty bread and butter.
Foil Cooked Meatloaf
Ingredients
• 2 pounds of ground beef
• 1 egg, ½ a cup of bread crumbs
• ½ a can of tomato soup
• Salt & pepper to taste
Mix all the ingredients together in a suitable container or bowl until it all binds together and can be moulded into a loaf shape of your choice. Place into a large piece of tin foil and wrap well, leaving an air pocket at the top for steam. Cook on small grill on top of fire embers for approximately ¾ of an hour, turning as necessary. Serve with potatoes and vegetables of your choice. Will serve 4 people.
Mum's Hotpot recipe
This hotpot recipe is one of the best camping foods because it's delicious, quick and cooks in one pot. This is a very quick and easy meal to cook in a camp oven.
Ingredients
• 500g (1 lb) beef steak diced
• 1 onion
• 2 cloves garlic
• 1 carrot
• 4 potatoes
• soy sauce
• 1 beef stock cube or powder
• salt and pepper
• oil for frying
• 1 can of peas and corn (optional)
Method
Chop the onion and garlic and fry these in a little oil. Add the diced cubes of beef and cook until browned. Add salt and pepper, a little soy sauce and the powdered beef stock. Cover and cook for about 10 minutes while you peel and dice the potatoes and carrot.
Add the diced vegetables to the pot, along with a tablespoon of salt and enough water to cover the vegetables. Cover and bring to the boil, then simmer for about 15 minutes until all the vegetables are cooked.
If you like, add a can of peas and corn and cook for a few extra minutes. If the gravy needs thickening, mix a tablespoon of cornflour in half a cup of water, add this to the pot and stir while bringing to the boil. Cook for one minute, or until gravy thickens. Serves 4 people.
Baked Banana
For a quick tasty desert, simply split a banana lengthwise leaving the skin on. Insert brown sugar and butter into split. Wrap in tin foil and bake in embers of fire until sugar and butter melt into the banana.
Jaffles
The other piece of equipment ideal for preparing camping foods is a jaffle iron. This is a cast iron sandwich toaster which you place over hot coals to cook. The interesting thing we notice is that the design of these probably hasn't changed for the past 50 years. You can tell by the size of bread you need to buy to fit the jaffle iron - the main brand bread types are all too large! You have to buy the smaller loaves of bread with the slices about two-thirds the surface area of what we would normally consider to be a sandwich loaf. When you buy a jaffle iron, you can buy a single or a double one. We recommend choosing the double iron unless you are only cooking for one. For a family, having two double sized ones makes cooking the meal much quicker!
Cooking your Jaffles
Butter two slices of bread for each jaffle. Place one slice of bread (butter side down), into the deeper pocket of the jaffle iron then add your fillings, cover with the second slice of bread (butter side up), close the jaffle iron and place directly onto warm coals. Cook for about 3 to 5 minutes, then turn the iron over and cook the other side for 3 to 5 minutes. Don't worry that the edges get burnt, use a knife to slice these off before serving the cooked jaffle.
Jaffles Recipes – Fillings
You can make very simple jaffles with jam or honey fillings, or you can get very creative. Here are some favourites:
• Ham, cheese, tomato and onion
• Baked beans
• Egg
• Cooked bacon, cheese and egg
Try these or anything else that you would put in a toasted sandwich - you're guaranteed to enjoy them.
Cooking Hint
To avoid getting burnt by the campfire, use your shovel to drag a few coals out beside the fire and cook your jaffles on these. As the coals cool down, replace them with warmer ones (or you'll be waiting a long time for your jaffles to cook!)
